I’ve just had this for tea. Can’t stop chuckling to myself that this is fine to have on Slimming World. It was gorgeous. I was fancying burgers earlier on this week. I even nearly broke a near 2 year abstinence from McDonald’s food . I planned on this meal for tonight instead and it certainly was the right decision. Has also picked me up since feeling rather lousy the past few days.
Double cheeseburger – free (if using the roll and cheese slices as HEA and HEB). Made from extra lean mince, onion, garlic
SW chips (free)
Loads of salad & mushrooms – super free.
Really enjoyed this meal last night. Bought a pack of New Zealand half shell mussels from Costco, cooked them in the steamer with a bit of salt, pepper, parsley and sprinkle of ground garlic. Would have added lemon if wed had any. For the ‘Italian pasta’ I roughly chop and onion and add it to a pan sprayed with fry light on full heat add feshly ground salt and pepper, 3 teaspoons of ground dried garlic, 2 teaspoons paprika, and 1 tablespoon of italian seasoning. I let it cook for a couple of minutes, stirring frequently, then add a tin of chopped tomatos and leave that bubble away for a couple of minutes. I then add a load of pasta to a pan of boiling water. Then , cover the sauce and turn down to the lowest heat and leave to cook gently. When the pasta is done, drain off the water, put back in the pan and mix in the sauce. Makes a really nice, quick, simple meal, which I usually have on its own or with something on the side – usually a chicken a breast or something like that. The mussels were a nice change!! Scrummy!!
